Gentlemen, your idea of avoiding crowds is genious. Here are my thoughts.
First off and foremost, if you are going to be in Europe for an extended period of time, buy yourselves an STA railpass. You will save huge $$ in the long-run.
As far as places to visit, I am a huge fan of Interlaken, Switzerland (20 minutes outside Bern). You can train there from just about anywhere. It is the second most popular extreme sports capital in the world. The town itself is positioned between two lakes (thus the name) and sits at the base of the Swiss Alps. Here you can go on the best hikes and bikes rides of your LIFE or spend some coin and enjoy some ice climbing, skiing/snowboarding (even during the summer), canyoning, rope-swinging (man version), etc. I recommend canyoning...look into it.
